    「新華社」年越しに欠かせない郷土菓子「牛皮糖」浙江省寧海県

    中国浙江省寧波市寧海(ねいかい)県では、お茶とお茶菓子を楽しむ習慣が先祖代々、住民の間で受け継がれてきた。二十四節気の大雪(たいせつ)を過ぎると、同県の各家庭で年越しに欠かせない郷土菓子「牛皮糖」作りの準備が始まる。1970年代から、地元の村の住民と製糖技師が先人の製糖技術を掘り起こして整理し、伝統食品として改めて販売。食感、弾力性、柔らかさの三つがそろった最高の状態にたどり着いた。牛皮糖作りは、洗い、蒸し、煮詰め、炒りなど多くの工程を経る。まずサツマイモを洗って皮をむき、スライスしてから千切りダイコンと一緒に鍋でよく蒸す。蒸して柔らかくなったサツマイモに麦芽を加えてペースト状にすりつぶし、ふたをしてしばらく蒸らしてから水気を切り、シロップになるまで煮詰める。煮詰めたものにピーナツ、ゴマ、オレンジピール、ショウガパウダーを加え、数回炒ってからすくい取り、シロップが冷めて固まるのを待って、サツマイモの粉をたっぷりまぶせば出来上がりとなる。(記者/顧小立)=配信日:2020(令和2)年12月13日、クレジット:新華社/共同通信イメージズ
